Buffalo Chicken Dip

If you love buffalo wings, but don't like the work or the mess...this recipe's for you!

32 oz cream cheese
2 cups buffalo or hot sauce
2 cups ranch dressing
4 cups chicken, cooked & shredded
2 cups shredded cheddar cheese
======================
Preheat oven to 350 degrees.
Mix together the cream cheese and buffalo sauce.
Mix in the ranch dressing.
Stir in the chicken and cheese.
Bake for 30 minutes.
If oil collects on top, dab it with a paper towel.
======================
Serve with Fritos Corn Chips.

Grape Salad

OMG! This is so good! I made it again last night and Jimmy took it to a potluck at work today. "Raves" isn't the word for it!

4 lbs Seedless Grapes
8 oz Cream Cheese
8 oz Sour Cream
1/2 Cup White Sugar
1 Teaspoon Vanilla Extract
4 oz Chopped Pecans
2 Tablespoons Brown Sugar

Wash and dry grapes.
Slice grapes into halves and set aside.
In another bowl, cream together the cream cheese and white sugar.
Mix in the sour cream and vanilla extract.
Add the grapes. Mix until incorporated.
Add brown sugar and pecans. Mix until incorporated.
Refrigerate until ready to serve.

Pink Salad

Good stuff! Easy to make. Compliments will be forthcoming......

1 can cherry pie filling
1 large can crushed pineapple, drained
1 can sweetened condensed milk (not evaporated milk)
1 cup flaked coconut
1 cup chopped pecans or walnuts
12 oz cool whip

==================

Mix all ingredients and chill.

Butterscotch Cream Pie

1 Ready-prepared Graham Cracker Pie Crust
8 oz Softened Cream Cheese
14 oz Sweetened Condensed Milk (not evaporated milk)
3/4 cup Cold Water
1 (4-serving size) Instant Butterscotch Pudding Mix
8 oz Cool Whip, divided in half

Beat the cream cheese until smooth.
Beat in the sweetened condensed milk until smooth.
Beat in the cold water and poudding mix until smooth.
Fold in half of the Cool Whip.
Pour into pie crust.
Top with the other half of the Cool Whip.

Refrigerate until set.

Fruit Dip

1 Jar Marshmallow Kreme
8 oz Sour Cream
8 oz Cream Cheese
1 Can Sweetened Condensed Milk
---
Caramel Topping
Small Semi-Sweet Chocolate Chips
----------------
Whip the first four ingredients together.
Pour into a 9x13 pan.
Pour caramel over the top.
Sprinkle the chocolate chips on top.
----------------
Dip sliced apples, strawberries, pineapple, kiwi...whatever fruit you like.

Chocolate Fudge Strawberry Truffle Cake

This is my FAVORITE DESSERT, posted at the request of a co-worker.
============================
1 Chocolate Fudge Cake Mix w/ related ingredients.
============================
12 oz semi-sweet chocolate chips
1 1/3 cups heavy whipping cream
1/4 cup butter (do not use margarine)
============================
Fresh Strawberries
1/4 cup white vanilla baking chips
1/2 teaspoon vegetable oil
============================
(1) Bake the cake as instructed on the box.
(2) Cool the cake completely.
(3) Cut the cake into 1" squares.
(4) Grind the cake into crumbs with a mixer.
(5) Pour the semi-sweet chips in a bowl.
(6) Heat the cream and butter in a pan until almost boiling.
(7) Pour the cream and butter mixture over the chocolate chips and stir until smooth.
(8) Combine the chocolate mixture and cake crumbs.
(9) Completely line a 10" round springform pan with waxed paper or plastic wrap.
(10) Pour the cake mixture into the pan and smooth out.
(11) Refrigerate overnight until set.
(12) Remove the sides of the springform pan.
(13) Invert the cake onto a plate.
(14) Remove the bottom of the pan.
(15) Remove the plastic wrap or waxed paper.
(16) Chop the strawberries the sprinkle them on top.
(17) Melt the vanilla chips with the vegetable oil and drizzle on top.

Oreo Cake

This one is to die for!

1 Devil's Food Cake Mix w/ related ingredients

1/2 cup Sugar
8 oz Cream Cheese, room temperature
8 oz Cool Whip
1/2 package Oreo Cookies, crushed

1 container Devil's Food Cake Icing

(1) Prepare the cake as directed in two 9" round cake pans.
(2) Allow cake to cool completely.
(3) Cream together the cream cheese and sugar.
(4) Mix in the cool whip and cookies.
(5) Top one of the cakes with the cookie/cream cheese mixture (you should have a couple inches of filling).
(6) Place the other cake on top of the cookie/cream cheese mixture, to resemble a large Oreo cookie.
(7) Heavily frost the top [only] of the cake.

No-Bake Key Lime Mousse Pie

This is so easy to make, only takes 5 ingredients, and tastes unbelievable! You can use a graham cracker crust, but we prefer an oreo crust. Yeah, I know, oreo crust with a lime pie? Try it. DEE-LISH!

1 Graham Cracker Crust
===========================
1/3 cup Key Lime Juice (Wal Mart has it with the little plastic lemons and limes in the produce section)
1 Small Container Cool Whip
1 Can Sweetened Condensed Milk (not evaporated milk)
1 Lime for Garnish
===========================
Mix the juice, cool whip and milk in a bowl until well blended.
Pour into the pie crust
Chill.

Slice the lime.
Cut two of the slices in half.
Cut each half in half, but don't cut through the peel.
Twist each half and place in the middle of the pie in a "+" sign

Very Easy, Very Cherry Cake

1 Ten-inch Angel Food Cake
2 Cans Cherry Pie Filling
16 oz Cream Cheese, room temperature
12 oz Whipped Topping
1 1/2 Cups Confectioiners Sugar

Prepare in a bowl measuring at least 10" across and 5" deep
===================
(1) Break angel food cake into pieces.
(2) Place a layer in the bottom of the bowl.
(3) Top with one can of the pie filling.
(4) Beat cream cheese, whipped topping and sugar until smooth.
(5) Pour 1/2 of the mixture on top of the pie filling layer.
(6) Repeat layers.
(7) Cover with plastic wrap and refrigerate overnight.

Almond Joy Pie

2 cups milk
3/4 cup sugar
1/2 cup biscuit mix
4 eggs
1/4 cup melted butter
1 1/2 teaspoons vanilla
---------
flaked coconut
---------
sliced or slivered almonds
6 oz Semi-sweet chocolate chips
1 tablespoon vegetable oil
==========
(1) Preheat oven to 350 degrees.
(2) Mix the first 6 ingredienta in a blender for 3 minutes.
(3) Pour into a greased 9" pie pan.
(4) Let sit for 5 minutes.
(5) Sprinkle coconut on top.
(6) Bake for 40-50 minutes.
(7) Let pie cool completely.
(8) Sprinkle almonds on top.
(9) Microwave chocolate chips and oil until melted and smooth and drizzle on top.

Welcome to my newest blog. I created this one to post recipes of some of my favorite foods. I love to cook, and when I talk about it on Facebook, someone always asks for the recipes.

Time permitted, I'll try to post a recipe every Sunday. I'm usually up early anyway, so why not have some creative time?
